I usually have a cup of black tea around 4pm in the afternoon. Although I am not English, I like this little tradition. At the weekends, it gives me a comfortable feeling when sitting on the couch and reading a book.
I sat in exactly that cosy spot two weeks ago and felt a craving for something sweet with my tea. I was too lazy to walk to the supermarket, but concocted something homemade in my kitchen. You may find the result below. Let me know what you think!
Ingredients for 15 big cookies
- 300g spelt flour
- 1 packet baking powder
- ½ teaspoon salt
- 225g butter
- 350g cane sugar
- 2 eggs
- 1 chocolate bar (white, milk or dark)
- melt the butter in a pot on low temperature
- chip the chocolate bar into pieces (the bigger the pieces, the bigger the chunks).
- Preheat the convection oven to 180°C
Mix the butter with the sugar until it gets foamy and add the eggs.
In a separate bowl, mix the flour with the baking powder and the salt. Add the mixture to the sugar and the eggs, and then put the chocolate chips.
Take a teaspoon to put heaps of the dough on the baking tray with parchment paper. I put 9 heaps on one tray. Look out: the heaps will enlarge a lot!
Bake the cookies 15 minutes until they have a golden colour.
