I am usually not a breakfast person, but if I take the time for it (mostly at the weekend) I am celebrating it. Eggs, avocado on toast, waffles, pancakes… the recipe below is my favourite for pancakes at it takes only 15 minutes until they are on your plate!
Ingredients for 10 small pancakes
- 150 g flour
- 100ml milk
- 200 ml natural yoghurt
- 2 tablespoons cane sugar
- 1 packet baking powder
- 3 eggs
- 1 pinch of salt
Beat the eggs until they are foamy. Mix the milk and the yogurt. Add flour, baking powder, the milk-yogurt mixture, salt and sugar gradually to the eggs and keep stirring. If the dough is too thick, add a little more milk.
Warm up one teaspoon of butter in a pan, the stove on medium heat and bake the pancakes until they have a golden coulour.
Can be served with maple syrup, beet sugar syrup, honey or fruits.
In Winter I like to eat the pancakes with heated frozen fruits and cinnamon, a little icing sugar on top – delicious!
Tip: the more yoghurt you take, the juicer the pancakes get! Milk and yoghurt simply have to add up to 300 ml in total.
