Cinnamon cookies

It’s beginning to smell a lot like Christmas…

I don’t know about you, but I am one of these people who love the festive season! I am listening to Christmas music from the first Advent until (at least!) the 26th of December, make homemade mulled wine and of course cookies. I am sharing one of my favourite recipes with you below.

Ingredients (for 60 cookies)

  • 250g flour (I use spelt flour)
  • 75g sugar (I use cane sugar)
  • 1 packet vanilla sugar
  • 2 tablespoons rum
  • 1 pinch of salt
  • 1 tablespoon ground cinnamon
  • 1 egg yolk
  • 125 g butter (room temperature)

Method

Sieve the flour into a mixing bowl. Add sugar, vanilla sugar, rum, salt, cinnamon and egg yolks. Cut the butter into pieces and add it, too.

Mix the ingredients with a dough hook and afterwards knead the mixture with your hands until you get a smooth lump. Wrap plastic foil around it and put the dough for 1 hour into the fridge.

Preheat the oven to 180°. Transfer the dough to a work surface lightly dusted with flour. Roll out the dough thinly. Cut out cookies with different Christmas shapes, and then put them on a baking tray with parchment paper. Bake them for 10 minutes.

Icing

Mix icing sugar with water. Once the cookies cooled off, put the mixture on top followed by sprinkles or other decoration.

Ready are the cinnamon cookies guaranteeing a Christmassy smell!
